  • 1.5 lbs (700g) boneless beef or chicken, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons Massaman curry paste (available in Asian grocery stores or you can make your own)
  • 1 can (14 oz or 400ml) coconut milk
  • 1 cup beef or chicken broth
  • 2 medium potatoes, peeled and cut into chunks
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 1 tablespoon tamarind paste (optional)
  • 1 tablespoon brown sugar (optional)
  • Salt, to taste
  • Roasted peanuts and fresh cilantro (coriander), for garnish

Instructions:

  1. Heat the vegetable oil in a large pot or deep skillet over medium heat. Add the sliced onion and cook until softened and lightly browned, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot and sauté for another minute until fragrant.
  3. Stir in the Massaman curry paste and cook for a couple of minutes, stirring constantly to coat the onions and garlic.
  4. Add the beef or chicken pieces to the pot and cook until they are browned on all sides, about 5-7 minutes.
